Grilled Peaches with Rosemary Lavender Honey

Nothing screams summer like firing up the grill and tossing on your favorite cuts of meat, market-fresh fish, and hearty veggies. The good news is, once you’ve got the BBQ hot n’ ready to go, only a few minutes stand between you and one of my favorite summer desserts: grilled peaches. They’re juicy, smoky, tender, perfectly sweet, and most importantly, topped with a fragrant Rosemary Lavender Honey that enhances the brightness of the peaches. So, the next time you find yourself in need of a snappy treat to feed a crowd, serve these showstoppers with a scoop of vanilla ice cream and you’re good to go!

Prep Time: 5 minutes

INGREDIENTS

Olive oil, for drizzling and the grill

1 cup lavender honey (orange blossom honey is a good alternative if you can’t find lavender honey)

1 sprig fresh rosemary

5 firm ripe peaches, halved and pitted

1 pint vanilla ice cream, to serve

Flaked salt or fleur-de-sel, for garnish

DIRECTIONS

Heat a grill or grill pan over medium-high heat. Lightly brush with olive oil.

Place the honey and rosemary in a small saucepan and warm gently over medium heat for 2-3 minutes. Alternatively, you can warm the honey and rosemary in a glass bowl in the microwave for about a minute, until thin and pourable.

Lightly brush the peach halves all over with olive oil. Place the peaches cut side down on the grill and cook for 2-3 minutes on each side, until warmed through and with visible grill marks.

Brush the honey over the cut side of the grilled peaches.

To serve, place two peach halves in the center of a plate or bowl, top with a scoop of ice cream, and an extra drizzle of honey and a tiny sprinkle of flaked salt.
