Curry Chicken Salad
1 rotisserie chicken (skin discarded, shredded)
3/4 cup red grapes
1/2 cup slivered almonds, toasted
2 scallions, chopped
Curry Mayo
1 1/2 cups mayonnaise
3 tablespoons curry powder
1 teaspoon dry mustard powder
1 lime (zested and juiced)
Directions:
For the Curry Mayo:
In a small saute pan, toast the curry powder over low heat until fragrant. In a small bowl, combine toasted curry with mayo, lime zest, lime juice and mustard powder.
For the Curry Chicken Salad:
In a large bowl add the curry mayonnaise to the rotisserie chicken and mix to coat. Gently stir in the red grapes, almonds and scallions until just combined.
Honey Mustard
Makes about 1¼ cups
1 cup mayonnaise
2 tablespoons honey
¼ cup yellow mustard
Pinch kosher salt
Combine all ingredients and mix until all ingredients are incorporated.
